Green Monster Muffins {Toddler-Approved, Paleo}

There are two major things we battle about in this seemingly toddler-run household: food and sharing.

The latter one, well… he’s two. ‘Nuff said.

The first one though, that’s a biggie around here. It’s not unheard of {understatement of the year} for a toddler to be picky when it comes to food. Our toddler is a different breed of picky though – he knows exactly what he wants and nothing else will serve as a valid substitute. And whatever it is, he always, always wants more of it.

So our battle lies not in cramming as much nutrition into him in as few bites as possible, but in making sure that we’re ok with him having more {and more and more} of whatever it is that he’s chosen as his trophy food of the day.

Sometimes it’s easy, sometimes not so much. I still try to get a variety of foods in him, so sometimes it just comes down to creativity; turning an old standby into something new.

I don’t know a kid {or adult} who doesn’t like muffins, so I went with a fun, nutrient-packed version for my crazy kiddo.

{They happen to be gluten free, dairy free, soy free, and paleo, because, well, we’re not picky at all over here. Winking smile}

Toddler-Approved Monster Muffins

Ingredients (6 muffins)

  • 1 1/2 cups almond flour (or flour of choice)
  • 1 cup packed baby spinach leaves
  • 2T coconut oil, softened
  • 1/4 cup applesauce
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Puree spinach in food processor. Add in remaining ingredients and blend until combined. (You can also use a mixer or spoon.)
  2. Line muffin tin with liners or non-stick spray. Fill cups 3/4 quarters full.
  3. Bake for 15 minutes at 350 degrees.

 

And since somebody only wanted to eat the muffin tops, I got some too {for once}.

Just pinned! My 4 yo is now at the stage where she refuses anything green, but she would have gobbled these up as a toddler and I’m saving them for baby #2!

Just pulled yhese out of the oven and my 2yo and 4yo are super excited when i told them i made green monster muffins! The name is everything!
