Thoughts
A little of what we’ve been up to this month with What’s Up Wednesday.

I know, I know, 2 posts in 2 days.
What we’re eating this week:
Buffalo chicken chili, spaghetti squash casserole, African peanut stew, and endless bowls of sweet kale salad {always}. {Here’s our meal plan from last week.}
What I’m reminiscing about:
Dry weather. Perhaps this is the year I finally invest in a raincoat. Or umbrella.

What I’m loving:
My latest WAHM coaching group – last year I started coaching other moms and women on how to create their own career freedom and spend more time doing the things that matter to them {like hanging with the kiddos} and I looooove hearing what other women are passionate about and their amazing ideas – it’s so inspiring.
What we’ve been up to:
Getting wet in the rain. There’s only so many indoor activities I can handle and since it’s not actually cold out yet, the rain is a welcome opportunity to have a little childhood fun. Splashing in puddles and mud pies, anyone?

What I’m dreading:
One of the big companies I do a ton of work for is axing staff this week. I’m not so much dreading which side of the equation I’ll fall on as having the idea hang over my head for a month.
What I’m working on:
New coaching programs for my WAHM groups AND my nutrition groups. I’m switching my nutrition counseling to a group format to help with accountability and I’m super excited about seeing it unfold.
What I’m excited about:
I think I’ve already used the words “excited about” too many times in this post to answer this separately, but why not: fall weather. red leaves. pumpkins. apples. bonus baby ultrasound today. <3
What I’m watching/reading:
I ran out of books on my reserved list at the library so I’ve been working my way through old Jodi Picoult’s that I have at home. So far this week I’ve re-read 19 Minutes {holy cow, not a good book to read once you’re a parent} and I’m working on Vanishing Acts. Before that I finished A Walk Across the Sun and Unbroken – I highly, highly recommend the first, and while it’s an impressive story, I can’t get on the bandwagon of everyone being obsessed with the latter.

What I’m listening to:
Boys wrestling on the office floor. And by “boys”, I mean my three year old and the husband. I’m beginning to realize what my house might sound like all the time once I have two kids…
What I’m wearing:
I should never be allowed to answer this question. Stretchy workout pants and sweatshirt. 21 Day Fix Dirty 30 is on the agenda but honestly, I’d be wearing this anyways. #nothingfits
What I’m doing this weekend:
Hanging out with my boys. Hopefully going to KB’s second soccer game. He had a blast at his first soccer game, but last week’s was rained out.

What I’m looking forward to next month:
Halloween, duh. KB’s been asking for it since early September. At least now I can say it’s on the radar. Now we just have to choose between a tiger, dinosaur, Spiderman, and whatever else a three year old comes up with between now and eternity {aka 4 weeks}.

What else is new:
I actually wrote a pregnancy update. Two in 30 weeks is good, right?
What’s your favorite Halloween tradition:
I used to love our neighbors’ wine & s’mores station, but now that we live in a new neighborhood I have no idea what to expect. I don’t even know if little kids live here. It’s a ghost town. Perhaps it’ll be perfect for Halloween…
My new favorite tradition is the “Teal Pumpkin Project” – you put a teal pumpkin on your porch to let families know you have allergy-friendly or non-candy treats available. I think I’d love this even if we didn’t deal with allergies – hello candy overload.

With Halloween right around the corner all I can think about is candy. It’s everywhere. The end caps at the grocery store. The opening display at Target. The checkout line. Blogs. Pinterest. Facebook. EVERYWHERE. And there’s not one piece of it I can eat. {Ok that’s a totally lie- I may or may not have eaten an entire bag of candy corn by myself in 2 days; HFCS and all.}
What I really mean is that I can’t eat my favorites: Twix Bars & Snickers. Now, I’m not a chocolate fan, but when you use it to wrap up caramel-y deliciousness, I’m all in.
The husband cringes every Halloween because I’m that neighbor. The one that gives out pretzels. But I’m not a total party pooper- I compromise and hand out fun size candy bars along with the pretzels. If I’m being honest, the candy is really so the husband and I can eat the leftovers, not because I think the kids need it. And yes, I by the variety pack and then hide all my favorites on the bottom of the bowl in hopes that those will be what’s left at the end of the night. Don’t lie, you do it too.
{If you’re trying to be healthy and still want to give out candy, try buying something you don’t like. We did that last year and there are still remnants of Jolly Rancher chews sitting around in random corners.}
If you can’t tell, I’m totally in the camp that it’s ok to partake in the Halloween treats and not just the tricks, as long as you’re smart about it. So what’s a girl to do when she can’t eat her beloved Twix and they’re taunting her everywhere she looks?

Dig into the old favorite recipe archive and bring back an oldie but a goody. Technically it’s millionaire’s shortbread, but how is that really any different than a Twix bar? {Except for the sea salt on top which only makes it that much better.}

You can certainly use a dairy-free, soy-free spread like Earth Balance {the red container}, but this time around I went with coconut oil. Holy deliciousness. Makes a bit of a mess in the warmer non-fall weather surge we’re having, but they taste great chilled right out of the fridge or freezer.

It’s vegan. Dairy free. Soy free. Woohoooo! Don’t go fooling yourself, it’s still full of sugar- I’m not a miracle worker.
Dairy Free Twix Recipe
Can't eat dairy? No problem. Enjoy this dairy free twix bar recipe instead. (Psst...it's way easier than it looks.)
For the Cookie
-
1/2
cup
non-dairy butter
cold
-
2
cups
all-purpose flour
-
1/4
cup
packed brown sugar
-
1/4
tsp
sea salt
For the Caramel
-
1/2
cup
granulated sugar
-
1/2
cup
non dairy creamer {I used So Delicious coconut creamer}
-
1/2
cup
golden syrup {I used Lyle’s}
-
1
Tbsp
non dairy butter
-
1/2
Tbsp
vanilla extract
For the Chocolate Coating
-
1 1/2
cups
dark chocolate chips {non-dairy
such as Enjoy Life}
-
1
Tbsp
coconut oil
-
1
Tbsp
high quality sea salt {fleur de sel}
For the Cookie
-
Put the non-dairy butter, flour, brown sugar, and salt for the cookie in food processor and chop until blended.
-
Press mixture into 11x7 or 9x9 baking dish lined with foil & greased, packing firmly. Bake at 350 degrees for 20 minutes or until lightly browned.
-
Let cool thoroughly before moving on. {Can place in fridge.}
For the Caramel
-
In a large saucepan over medium heat, mix granulated sugar, creamer, and golden syrup. Stir consistently until sugar dissolves. If you have a thermometer, use it.
-
When sugar dissolves, stir in butter. Continue stirring until mixture boils; hands off- don’t touch now!
-
Let mixture boil until it reaches 245 degrees.
-
Stir in vanilla, then pour on top of shortbread and spread evenly. Let cool completely.
For the Chocolate Coating
-
Melt chocolate chips and coconut oil over double boiler, stirring until smooth.
-
Poor over caramel layer and spread evenly.
-
Before chocolate hardens, sprinkle generously with fleur de sel.
-
Let cool. May need to refrigerate or even freeze.
-
Slice into bite sized pieces.
-
To make more Twix-like, slice cookie & caramel layer into long strips before drizzling with chocolate and let chocolate spill over the sides. Omit salt. Mmmm.

What’s your favorite Halloween candy? Have you tried making a homemade version of you favorite candy bar before?
Holidays
I realize it’s a little ridiculous, but I desperately wanted to take the little bug to a pumpkin patch this year. I know he’s not old enough to have a clue, but I just can’t bypass his first Halloween without a little celebration. I compromised this weekend and took him to roadside stand with pre-picked pumpkins. He loved it. I loved it. And the pumpkin-themed pictures made me start thinking about all the other holiday we have coming up and all the cute pictures we’ll get to take.

I know it’s only October, but word on the street is it’s time to start taking Christmas pictures already. WAhhhaaat?! I’m not ready to do that quite yet {he grows too fast to pull off a Christmas picture at 9 months when he’ll almost be 12 months, plus there’s no way I’m pulling out Christmas stuff}. Nonetheless it made me realize I’ll have to get my act together this year. The novelty of sending holiday cards kind of wore off when we started having friends and family with kids that would send the adorable photo cards in the mail. Somehow a white card with our names signed in the corner just lost it’s appeal. But this year I’d say we have some pretty cute material to work with.

You all know I love my photo books. I haven’t made one since the babe was 6 weeks old. I’m working on one, but let’s just say it’s taking awhile. While working on my book I got a little distracted and started looking through all the photo card options on the Shutterfly site.
So.many.choices.
Apparently in addition to starting to think about Christmas cards in the fall, people also plan their Christmas pictures around the card they pick out. I’m so not that organized. But of course I started looking and brainstorming anyways.

I’m in love with the “Merry Everything” themes.

The “Top 10 Moments” is a pretty stinkin’ cute idea too.

Thinking about Christmas absolutely blows my mind. Last year on Christmas I was big and pregnant and blissfully unaware what was about to happen the next week. Let’s just say my mom packed up all my Christmas stuff while I snuggled with a brand new babe. I can’t believe that this Christmas is going to be spent watching the little guy play with the wrapping paper and low-hanging ornaments and tugging on the tree. I guess it shouldn’t really surprise me that I’m getting nostalgic thinking about the holidays when I’m already thinking about his first birthday… cue the water works.

Anyways. So fill me in on this Christmas card photo thing. Do I realllllly need to be planning this already?!
And in case the answer is yes, and you’re planning already too, Shutterfly is giving one of you $50 off your total order {not including shipping}. Leave a comment about your favorite holiday photo idea below! Ends Friday. You can also check out the special offers they have available.
{You can also get 30% off photo books.}
Disclosure: I received a discount on my holiday photo cards from Shutterfly in exchange for this post. Woot woot.

Ummm, what happened to Saturday? All the things I planned to get done…still not done.
Here’s what happened this week:
The husband and I dressed up as Juno & Paulie for Halloween. Original? No. Warm & comfortable? Yes.

I made more pancakes. But with dark chocolate and coffee. Really, you can’t get better than dark chocolate for breakfast.

I royally screwed up a recipe that resulted in… a delicious recipe. This citrus pecan loaf is now going to be my go-to gingerbread recipe for the holiday season. Not too gingerbread-y; a little citrus-y; a lot yummy.

I also gave away a Seventh Generation prize pack that included dishwashing soap, a Le Creuset baking dish, and Twist natural cleaning supplies. Skip to the bottom for the winner.
tiny stuff
Our little half pint isn’t so little anymore. We’ve passed the 2 pound mark and are enjoying the last week in the second trimester.
We also talked about poop a lot got a private lesson in cloth diapering, which was fun.

And I gave you my take on cloth diapering 101.

Cheaper Than Therapy wrote probably my favorite post ever: the top 10 differences between bloggers and journalists
I wish I had one of these Eat, Live, Run Apple Dumplings. Like right now.
This is a great article about barefoot/minimalist running. Just because you lose the shoes doesn’t mean your running form magically improves.
And now drumroll please…
The winner of the 7th Generation prize pack is…

Julianne!

Holidays
There’s no better indicator of age or stage of life than Halloween. The more clothes you’re wearing, the older you are. The more you acknowledge the freezing cold temperatures of October, the older you are.
Somewhere between scantily clad and doors-locked-lights-off-hiding-from-trick-or-treaters-in-bed-by-8 falls pregnant girl and her husband.

We’re Juno & Bleeker. Might as well use being pregnant to our advantage, right? {Any costume that lets me wear jeans, sneakers and a hoodie is right up my alley.}
We sort of pulled it off…?

Despite the near-frigid temperatures that so conveniently fell upon us suddenly on Saturday, we headed out to a Halloween/birthday party, complete with bobbing for apples and a costume contest.
The hosts and birthday boy, Ron Burgandy and Veronica Corningstone:

My winning costume votes? The bestest and her husband as Quailman and Patty Mayonnaise:

And another one of our friends as a hipster, which is only really funny if you know how not-hipster he really is.

Let’s not discuss the horrible quality of my pictures that may or may not have to do with a tragic camera accident earlier in the evening.
Did you/are you dressing up for Halloween? What’s the best costume you’ve ever had?
