Apparently there’s a holiday for everything. EVERY-thing. Today it’s National Drink Your Veggies Day. I guess I’m down with that. I love the idea of cramming a bunch of veggies into a single glass. I don’t know that I could ever really get into juicing because the idea of owning another piece of kitchen equipment, needing to clean it, and having to always have juice-able veggies on hand doesn’t completely appeal to me. Neither does the idea of drinking cucumbers and beets. Gross. Why does every juice recipe use those?
Anyways, I digress. Probably because I’m currently sitting on a balcony over looking the ocean. The fabulous life of the self-employed.
Back to National Drink Your Veggie Day. One way to drink your veggies without all of the above nonsense: buy juice premade. Like the Naked juice I used to make these enchiladas.

Naked’s Pinterest contest starts today. You can vote for my recipe or any of the fabulous other recipes using the Power Garden juices. What’s in it for you? The chance to win a $250 gift basket.

Today I have a fun post sponsored by Naked’s new Power Garden juices.

I’m not particularly a fan of hiding fruits or veggies in other foods, because it’s so often done in a deceitful manner to deceive kids. I don’t like lying about what’s in foods, but I definitely love maximizing the nutrition of my favorite recipes. It’s why I put zucchini, pumpkin, or carrots in muffins, apples in oatmeal, loads of veggies in pasta sauce, and spinach in smoothies.

Naked is known for their juices and smoothies that pack pounds of fruits and veggies in a single bottle. Their new line, Power Garden, has two flavors loaded with the good stuff: Tomato Kick and Berry Veggie.

Ahem… I may or may not be sitting on a porch with a bunch of helpful toddlers…
As I was saying, Naked asked a few of us to create some recipes using their pumped up juices. I’ve probably mentioned 5,495.394 times that I hate tomatoes, so I was pretty sure I would use the Berry juice for my recipe, but once I got to thinking, I decided to embrace the challenge and use the Tomato Kick juice.
The result? Pretty snazzy:

Slightly spicy meets cilantro-citrus infused enchilada sauce, made with Naked’s Tomato Kick juice- a fun way to add in an extra dose of veggies. A great way to jazz up your favorite enchilada recipe. Complements these pineapple-laced enchiladas quite well!

by with a Side of Sneakers
- 1 Tbsp butter {vegan or regular}
- 1 tablespoon cornstarch
- 3 tablespoons chili powder
- 12 oz tomato paste
- 1 1/4 cup Naked Tomato Kick juice
- 3/4 cup orange juice
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 2 garlic cloves minced garlic
- 1 Tbsp chopped fresh cilantro
- 1 tsp orange zest
- salt to taste
Bring sauce pan to medium heat. Melt butter then stir in cornstarch. Add Tomato Kick juice and whisk until combined, then add tomato paste and remaining ingredients.
Once thouroughly combined, reduce heat to low and simmer about ~10 minutes or until sauce slightly thickens.
Serve over your favorite enchiladas and top with orange zest.

Fun
It really impresses me when an insurance company tries to do something right. My life sometimes feels like it revolves around insurance, and not just when I’m paying medical bills.
As a dietitian, I’m constantly fighting for insurance companies to cover nutrition services. Not to mention my husband works for an insurance company. So we pretty much breathe insurance over here.
I don’t need to tell you that prevention is the best medicine. Eating healthy can not only prevent disease, in can completely turn it around. That’s why it makes me a little bit too excited to see an insurance company encouraging the nation to eat well. That’s what Aetna is doing with it’s Healthy Food Fight campaign.
I don’t know about you, but when I hear the words “food fight”, all I can think about is that scene from Hook. This isn’t exactly that kind of fun.

The Healthy Food Fight campaign is a way to encourage Americans to eat healthy, and to show them that it’s not that hard to do. Bobby Flay partnered up with the team to provide some easy, healthy recipes, as well as a series of 10 second healthy eating and cooking tips. I love the idea that someone can make an improvement to their health in 10 seconds.

The food fight website also has a tool to help you rate your recipes, based on how healthy they are. Think you have a healthy recipe people will love? Enter it into their recipe contest! The winners get to go cook for Bobby Flay & get the chance to win $10,000 in groceries from recipe.com.

Getting to meet Bobby Flay is enough reason to enter.
I thought about coming up with a new recipe for the contest, but in the end, I went with one of my favorite standbys: black bean pineapple enchiladas. They’re easy, they’re full of fiber, they’re low-fat and vegan, and everybody who eats them loves them.

So go enter your own recipe, or vote for mine. You can also join She Speaks for a twitter party tomorrow night for a chance to win some more goodies:

Based on our annual salsa consumption in this house, I’m thinking it’d be smart to start investing in restaurant-sized tubs of the stuff. Or in Old El Paso’s stock.
Not that we really needed an excuse, but I thought it might be nice to eat the stuff on something different for a change. Like enchiladas. Sure, they already have sauce, but I was sure they’d be even better with salsa.
I was right. Although what came out of my kitchen was more burrito-like. Somewhere between an enchilada and burrito. We’ll say it’s a burritolada.
Filled with refried beans, brown rice, and onion, these guys are sure to fill you up and satisfy you’re need for copious amounts of Mexican food.

At first glance, they look like my black bean pineapple enchiladas. I assure you they’re not. {Those are still my all time fave.}

My secret to delicious enchiladas without the cheese lies in the broiler. A few minutes on high to get a nice crispy, brownish crust, and they go from good to awesome.

With a nice pile of bell peppers cooked in Worcestershire sauce and cumin. You could opt to put these in the burritos if you wanted, but mine never would’ve rolled up. I like them on their own anyway.

Now comes the fun part: the toppings.

Salsa, jalapeno, and cilantro on mine, salsa, jalapeno, and sour cream for the husband. Much like our crock pot baked potatoes.
I’m not convinced I like cilantro.

Ingredients
- 10 whole wheat tortilla shells
- 2 cups brown rice
- 2 14.5 oz cans of vegetarian refried beans
- 2 Tbsp low sodium taco seasoning
- 1 onion, finely chopped
- 3 Tbsp tomato paste
- 3 Tbsp water
- 1 14.5 oz can enchilada sauce
- Optional toppings: salsa, jalapenos, cilantro
Instructions
- Prepare rice according to package directions.
- Saute onion on medium high heat until starts to brown.
- Stir in tomato paste and water. Let cook for a few minutes, then mix into cooked rice.
- Fill tortilla shells with a little bean mixture followed by some rice mixture.
- Fold the ends in, then roll up. Place seam side down in greased baking dish.
- Repeat for all enchiladas.
- Cover with enchilada sauce, making sure to cover as much of the tortilla as possible.
- Bake at 350 degrees for 20 minutes.
- For the last 3 minutes, crank broiler up to high. Cook until tops start to bubble or brown.

Are you a burrito person or an enchilada person? I’m not a fan of restaurant enchiladas at all, which is weird considering the amount I go through at home.

Sometimes you just plain don’t want to cook. You know the feeling- you’re tired, worn out, busy, too hungry, or just don’t feel like it. Or you’re on vacation. All good times to turn to the freezer, pop something in the oven or microwave, and simply sit down to eat.
What you pull out of the freezer can make all the difference. Sure, frozen pizzas, French fries, and microwave meals taste great, but too many of those aren’t doing anything stellar for your health.
So why not stock up on the good, healthy things you’d make if you did feel like cooking? Even if it’s not super healthy, making it yourself is likely to make it a lot better for you than anything that comes in a box.
Here are three things I love to have in my freezer:

If I know I’m going to eat them soon, I make them in the dish & freeze. {Sauce later.} If it might be a while, I like to make the enchiladas individually and freeze them separated on a cookie sheet. Once frozen, I toss them in a sealable plastic bag. Saves space & my dishes!
Whole Wheat Pizza Dough

A favorite pizza dough recipe. {I reverse the whole wheat & white flour amounts.}
Garlic Bread
I make spaghetti when I’m too lazy to come up with something else. Meaning, I’m too lazy to make garlic bread too. Easy solution: premade bread!

These will certain come in handy come January or February!
