It has been so so long since I actually wrote about food, but one of the biggest questions I get all the time is “what do you eat”? Whether it stems from being a dietitian, feeding a family, feeding a potential picky eater, or dealing with food allergies, I can see why the question is raised frequently. I could write endlessly about my different thoughts on food and how my food philosophy has changed over the years {and continues to change}, but I thought the easiest way would be to share our weekly meal plan.

So here’s what’s on tap for the week. Necessary disclaimers: this is just the stuff that needs to be prepared/cooked for dinner, not an all inclusive list of everything we plan to put in our mouths. That would be WAY too long of a post, considering we’re all big eaters and snackers. And I change my mind ALL the time, so just because I plan something doesn’t mean it will actually happen. Also, most of the time I don’t follow a recipe, but I tried to find ones that are at least similar to something I would do, or something I use for inspiration but always end up adapting and changing. Always feel free to adapt a recipe to meet your needs/preferences!

And lastly, planning for the weekend is a joke, unless I know exactly what our “social” plans are – we’ll either eat leftovers, grab something out, or wing it. During the summer we typically come up with something to grill so we can spend a little family time outside {and it’s the only way to trick the husband into helping cook. Shh don’t tell him my secret motivation.}

Monday // Meatless Monday

Creamy Spinach Sweet Potato Noodles with Cashew Sauce {I’m obsessed with spiralized veggie noodles}


Loaded Chicken and Potatoes – minus the cheese and bacon for us. Haven’t tried this one yet but love that it looks like a simple one dish meal and less boring than simply chicken and potatoes.


Thai Peanut Noodles with Shrimp – I dump this sauce on anything and call it a meal.


Sweet Potato Chicken Patties {paleo} with roasted parsnip fries and wilted garlicky greens {A tried and true weekly staple // I usually make a ton ahead of time and pop them in the freezer.}


Crockpot Mojo Pork & Black Beans – I’m super intimidated about buying meat, but this looks to Chipotle-esque {read: delicious} to not at least try. Plus by Friday I’m ready for something easy like a crockpot meal. Bonus points if it makes leftovers for the weekend.


Highly likely some form of grilled chicken and veggies. Lately we’ve been loving grilling potatoes – mm.
