Cranberry Pumpkin Seed Granola

Homemade granola is always one of those things I always say I’m going to make, but never do. The choices of what to put in a granola recipe are so endless that it’s too overwhelming to make a decision.

But once again, embarking on a road trip, I turned to my ol’ standby: oats. I said “what the heck” with all the possible ingredient decisions and just went with what I thought sounded good at the moment. {I can always make another batch, right?!}

Well, I’m so glad I did because what came out of the oven is my new favorite obsession. {You know, for the whole couple hours I’ve been eating it…}

Cranberry Pumpkin Seed  Granola

{measuring optional}

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/4 cup chia seeds

1/4 cup diced pecans

1 cup old fashioned oats

1/2 cup dried cranberries

3-4 Tbsp honey

pinch salt {if using unsalted seeds; optional}

 

Combine seeds, nuts, and oats. Drizzle with honey & stir until just lightly coated. You may or may not use all of it.

Spread mixture on lined baking sheet in thin layer. Bake for 25 to 30 minutes at 300 degrees, stirring halfway through. Oats should start to brown and get a little crispy when it’s done.

Remove from oven and let cool slightly before enjoying.

The best part of this recipe is that you really don’t have to follow it all. Feel free to adjust the measurements based on what ingredients you like best, or completely swap them out. Or you can double, triple, or quadruple it.

I havent made my own granola yet, but when I get store-bought Im a sucker for anything with cranberries and chocolate.

What a great granola recipe. I am heading out camping this afternoon so hopefully I can find the time to make a batch before leaving. This would be a great snack for the weekend. Thanks for sharing!

I like throwing cocoa and peanut butter in mine to give it a slightly sweet taste :)

Usually I make mine with a bunch of random nuts and maple syrup and OJ for the liquid. Do you warm the honey before drizzling it on? I seem to have trouble getting 1/2 a cup of liquid over 3-4 cups of dry things without getting my hands in the bowl and making sure everythings coated. Have any spare tips? ;) Your mix-in set up shots look really neat too~
