No-Fear, No-Fry

It’s been three whole days without meat, dairy, or eggs, and much to the husband’s disbelief, he’s still alive.

I’ve been easing him into the whole vegan thing slowly- no crazy foods, nothing scary, nothing unrecognizable.

Vegan doesn’t have to mean weird or unusual- it may be something you’re already eating and don’t know. Or maybe just one little change to something you already eat….like stir fry!

Stir fry is one of the easiest meals to make, and it’s packed full of veggies. Just leave out the meat!

Change it up by using different veggies and experimenting with different veggies. Here’s one of my favorite combos:

Spicy Pineapple Cashew Stir No-Fry

Sauce:

2 Tbsp tomato paste

1/4 cup veggie broth

3 Tbsp soy sauce

3 Tbsp orange juice

Siracha/hot chile sauce

Veggies:

1 Tbsp sesame oil

1 onion

1 red bell pepper

1 yellow bell pepper

1/2 head of broccoli

1/2 pint of mushrooms

1/2 can of pineapple chunks with some juice

1/2 cup cashews

1 tsp fresh ginger

2 cloves garlic

1 cup cooked whole grain rice

Whisk sauce ingredients together. Set aside.

Heat sesame oil in wok or pan. Sauté onions, then add in remaining vegetables, saving pineapple and ginger for last. If you have fresh ginger, use it- it makes a difference! Stir in sauce. {May need to increase sauce measurements depending on amount of veggies.}

Mix in rice. Serve!

Optionally, you can add tofu to the mix. {I kept the tofu far away from the husband’s plate.} If you haven’t baked tofu before, check out this tofu tutorial.

This looks great. I’ve actually been dying for stir-fry with brown rice but kept forgetting to buy rice at the store. I finally got it this week. I think I know what’ I’m having for dinner.

That’s awesome! I eat stir fry all the time, but never thought about the fact that it’s usually totally vegan! That makes it an easy food to “transition” with.

MMM! I love pineapple in stir frys. And I love that my last post is the epitome of NON-vegan cooking. HA! Don’t let your hubs see that!

Pasta is another dish I make a lot that I realize later was vegan. My latest obsession is kale sauteed in olive oil, garlic and crushed red pepper w/sun dried tomatoes, mushrooms and a splash of balsamic. SO GOOD!

I totally agree to not make crazy things for our husbands. I’m doing the challenge as well and start easy! I made brown rice risotto with mushrooms last night and my husband loved it! =)

My favorite crock pot chili is vegan and so is my barley asparagus risotto. Hunni used to be afraid of the word until I told him half his food was vegan (even though I’m only a vegetarian).

i already eat vegan stir fry too! otherwise, i eat a lot of vegetarian meals, but not vegan.
