It’s Friday!!
That means:
- I’m 1 paper and 1 exam away from the end of the semester….and the 1st 2 week break I’ve had since January.
- It’s 1 day until our annual Christmas party!
- I’m celebrating with oatmeal pancakes.
My favorite recipe for pancakes:
1/2 cup whole wheat flour
1/2 cup old fashioned oats (whole or ground)
1 t baking powder
1/8t baking soda
1/8t salt
cinnamon
1/2 T coconut oil (liquid)
1/2 c coconut yogurt (can use Greek too)
1/2 c almond milk (or any kind)
Peanut butter & unsweetened coconut for topping
Mix together dry ingredients. Whisk in coconut oil. Stir in yogurt and milk. Cook! Just a few minutes on each side.
Paaaaancaakkkeees.
Topping with PB and coconut. MMmmm.
It’s also Friday because of well, fries! I can talk about healthy food until my lips turn blue, but that doesn’t mean I don’t still eat junk food. Thanks to the Foodbuzz Tastemaker Program I had the chance to try Wendy’s new “natural-cut sea salt” fries.
To be honest, I wasn’t thrilled with the first few bites. I liked the old ones just fine. And I don’t like change. Butttttt as I continued to eat them (of course) they grew on me a bit. Ever so slightly reminded me of Boardwalk Fries…minus the vinegar. ![]()
Unfortunately the words “natural” and “sea salt” are going to throw poor, unsuspecting people for a loop. They’re in no way natural, healthier, or lower in sodium than the old fries. In fact, a medium order has 150 mg more sodium (!!!), 10 more calories, and 1 g more fat. Like people need more sodium in their fast food. But don’t worry, they’re trans fat free. [Enter sarcasm here.]
Now it’s time to get back to FRIday. It’s time for work, studying, writing, exam-taking, party-prepping, and Friday dance-time!

AH! A couple weeks ago I was feeling particularly rotten on a saturday afternoon (perhaps a combination of two much red wine the night prior + spending 8 hours ripping up old carpet & laying wood floors??) and I knew the only thing that would settle my stomach was an order of fries. Wendys was the closest- I didn’t even know they had “revamped” their fries!? But I ate a medium order in <10 minutes, so I think that means I like them. I do very much so wish they wouldn't promote them as "all natural sea salt" blahblahblah. They are just tastier fast food fries. The end.

About the fries: ploy to the max. Yeah, it’s good they’re making the fries more natural, but that does not make them health food. Unfortunately, most of our country is uneducated about what REAL health means and will buy into these, using it as an excuse to eat more. Ugh. Sorry, rant over!
