Carbo Loading

Dinner was a breeze thanks to my goodies from Carrabba’s yesterday. I had a huge plate of penne franco- penne, artichoke hearts, sundried tomatoes, ricotta salata, and mushrooms in a garlic olive oil sauce.

I have to be honest- it didn’t do much for me. Had I ordered it in a restaurant, I would have been really disappointed.

The bread, however did not disappoint. :) (I won’t tell you how many slices I ate in the car on the way home….)

The olive oil/seasoning mixture is one of the better ones I’ve had. I like to pile the spices on the bread—soo good. I could’ve eaten a whole plate of that and just forgotten about the pasta. ;)

Tomorrow starts the week of my month of craziness- Chicago, MD, Iron Girl tri, 24 Hours of Booty…phew!! Can’t wait!

Pasta doesn’t do much for me either. I prefer a plate of veggies ;)

That looks delicious. I have an upcoming race I need to carb-load for and perhaps I’ll try to recreate that dish….

That’s a great idea! It sounds like a pretty easy dish too- the ingredients are listed in the Tastemaker post from Sat!
