Nothing says “welcome home” like oatmeal… in chocolate-filled pancake form.
Chocolate Chip Oatmeal Pancakes
1/2 cup whole wheat flour
1/2 cup old fashioned oats
1/4 tsp baking powder
1/8 tsp baking soda
1/2 cup almond milk
3 Tbsp coconut yogurt {optional}
cinnamon
handful chocolate chips
Mix ingredients together; let sit for a few minutes. {You might need to increase the almond milk if you opt to leave the yogurt out.} Place by spoonfuls on hot pan.
Cook each side for a few minutes.
Makes ~6-7 3” pancakes.
Nothing like ooey-gooey chocolate melting out of a pancake full of hearty oatmeal.
After enjoying a lazy breakfast, I guess it’s time to unpack & get cleaned up from vacation. Sigh.
