Nibbles & Noshings

Tonight I had plans to meet girls for drinks apres-work. I needed something to hold me over, so I snacked on some Rice Works chips with melted Daiya cheese.

As I finished the chips, I realized we were getting drinks right about the time I start obsessing over what’s for dinner.

I’m not a pleasant hungry person, so I went on a voyage for quick-fix snacks to tide me over.

First up (second up?), okra from the farmer’s market!

The only okra I’ve ever had is fried from Church’s chicken. (It’s a southern thing. And it’s awesome.) Since I found some fresh at the farmer’s market, I just had to give it a try. I baked it for 10-15 min at 350. SO GOOD straight out of the oven. I added a little Old Bay just cuz that’s how I roll.

I made a dipping sauce of roasted red pepper hummus & ketchup- it was good, but not really necessary. The okra stood on it’s own.

Then another farmer’s market find- peaches!!!!!

I guess it’s a little early in the season for the really sweet peaches, but this was good & juicy none the less. It’d be perfect in a smoothie or cobbler.

Then my long awaited beverage of the evening:

Then it was time for some snacks- I sampled some surprise mixes I found at the salad bar the other day: black bean salad & an edamame-tofu salad.

The edamame tofu mixture was what first caught my attention- it appeared to be a mix of tofu, edamame, carrots, rice, sesame seeds, & some type of dressing.

The black bean salad was simply black beans, corn, red peppers, and a vinegar-y type sauce.

Neither one really did anything for me…

The tofu salad might inspire some new recipes though ;)

 

Who says dinner has to be all on one plate?! ;)

I’ve really want to try Daiya… still never have. It looks (sounds) SO good!

so does that okra… I WILL be trying that :)

I need to try the mozz Daiya cause I didn’t love the other cheddar flavor…that looks amazing lady!

Blue Moon is the BEST!! And girl, Okra is absolutely amazing. I love it boiled but that’s a big much for someone who’s not used to eating it.. I also have a mock “fried” recipe that involves baking it.. so good!

I need to try okra! It looks so good on the blogs. But I have only tried it frozen once and didn’t like it. I need to find some fresh okra.

I am so not a good hungry person too. I haven’t had okra since the last time I had gumbo. Great idea!

i am a VERY irritable hungry person. and i had a peach the other day and i was soooo excited but i think you’re right that it’s not time yet

I am the same way. If I’m hungry I become a cranky monster! Wish I didn’t. :(
