I’d like to thank Maria from Two Peas and their Pod for allowing me to just cook & not think tonight
I made her Lemon Orzo Salad with Asparagus, Spinach, and Feta for dinner tonight. It’s not often that I make a recipe as written, unaltered in any form. But tonight I came pretty close. The only thing I did differently was throw in a few kidney beans so I could have nice, one dish meal. Perhaps I threw in a little extra garlic too…;)
This dish was fantastic & fresh- perfect for Spring. I already have plans for the leftovers (which I had to beg the husband not to eat!). I should have made a lot more.
Triathlon Risk?
Here’s an interesting an article on deaths during triathlons… it’s never good when there’s a death during a sports event (or ever), and 14 people in 4 years does sound like a lot- but that’s out of almost a million triathletes– 959,214 participants to be exact.
What do you think about this? I think it’s important to be aware of, but it’s not going to stop me from doing it! (And make sure you got that swimming part down…
)

Wow. A triathlon doesn’t really appeal to me because of the swimming. I’m a good swimmer but the thought of swimming in a crowd like that freaks me out. And that death rate is scarily high.
I am so glad you liked the salad. I love your addition of beans, great protein source! I need to be better about getting protein in!
I’ve been meaning to try so many of your recipes- they all look fantastic! Thanks for sharing them
There’s always a chance of death in an athletic event, things happen. I don’t think it would ever stop me from entering a race, but the swimming part of a tri does seem overwhelming.
Hey girl – dinner looks great. Love easy summer dishes like that. I have seen similar articles. My husband does tris so of course it concerns me. However, you can really never predict when something like that may or may not happen unless someone has been diagnosed with a medical condition.
Great looking orzo, I love Maria’s recipes, never had a bad one, and I’ve tried a fair amount! I recently bought whole wheat orzo, and can’t wait to try it.
My thought on deaths during tri’s is that if you train properly, including being checked out by a doctor, you should have nothing to worry about. To the contrary, I ran the Detroit Marathon this past October and three people dropped dead during the half. One man was in his 60′s and had an existing condition and the other two were 28 and 36, and extremely healthy. I guess you need to know your limits and fatigue levels… tough question and one I am going to think more about.
I don’t think this should scare people away from triathalons, but instead athletes participating in them should consider the dangers of the race and make sure they are prepared. I know I’d probably panic in a situation with a lot of people around me in water, so I’m sure there’s a huge mental aspect to overcoming that portion of the race!!
What a great looking pasta dish – I have tons of orzo in my cabinet!
I don’t think about the deaths that occur in sporting events – I think the benefits clearly outweigh the chance of death.
I totally agree that it is good to be aware but it definitely doesn’t stop me from running marathons when I hear that people died during them!
Yeah you are so right. That is such a low number compared to the amount of people!!
You just got to train smart!
I LOVE orzo!!! This looks like a great spring dish!
If you got to go you might as well go doing something you love to do!
wow, that orzo salad looks soooo amazing!!!
Scary statistic – after freaking out during the swim leg of the Tri that I did in March, I definitely see how many deaths can occur during the swim (thank goodness I had on a wetsuit to help keep me above water!) BUT, I think as long as you train properly and know what you’re capable of – and know when to say “when” – the death rate shouldn’t stop you from Triing. Afterall, how many deaths occur during marathons? Or just from driving to work in the morning!
p.s. Dinner looked good – might have to try that one!
